It's Beef Empanadas Y'all!

While I was at my mom's house, I became a fan of the Food Network. They make some really great looking things on those shows! I must say Paula Deen cracked me up with her "Y'all." So today I was in another cooking mood and decided on a Mexican theme. Yesterday had been southern foods consisting of chicken and dumplings, squash casserole, and fried okra salad. Today I went even farther south. Today's menu consisted of Paula Deen's empanadas, cheese stuffed jalapeno poppers, and chips and dip. Rusty is one happy husband these days. What can I say? The cooler weather puts me in a cooking mood!
